OBJECTIVES

This group deals with different areas of research with the general aim to improve food quality and food safety.

AREAS OF RESEARCH

  1. Physiology and ecology of pathogenic bacteria biofilms with high incidence in the food industry.
  2. Development of chemical (combinations of disinfectants, essential oils) and biological (enzymes, phages) strategies of low environmental impact to remove biofilms from food industry surfaces.
  3. Study of modification mechanisms (autolytic and microbial) in fisheries and aquaculture products.
  4. Development of effective systems to monitor food quality and safety.
  5. Analysis of anthropogenic microbial pollution in the marine environment.

Furthermore, the Group of Microbiology and Technology of Marine Products (MTPM) integrates the R&D Advanced Service, which is the result of long-standing experience in Technology of Fishing Products collaborating with companies from the sector.

It also cooperates on a regular basis in scientific dissemination through different activities, such as the COCIÑAconCIENCIA (COOKwithSCIENCE) project
