OBJECTIVES

This group deals with different areas of research with the general aim to improve food quality and food safety.

AREAS OF RESEARCH

The main objective of our research is to design strategies to increase the quality and food safety of seafood.

IN SAFETY:

  • Study of the physiology of BIOFILMS formation of pathogenic bacteria of high incidence in industries and fishery products.
  • Development of chemical strategies (combinations of disinfectants, essential oils) and biological (enzymes, phages) effective for the elimination of monoespecies and mixed biofilms from surfaces of the food industry.
  • Studies of microbial ecology in mixed biofilms of L. monocytogenes. Relations between microscopic structure and resistance to external agents.

IN QUALITY:

Application of new sensor systems to improve control by monitoring the QUALITY and SAFETY of seafood. Hyperspectral analysis.
