Biografía

My main research interest lies in the recovery of marine biomolecules for therapeutic and food applications. My work spans from processes to isolate valuable biomolecules to its chemical characterization, and in some cases, chemical modification to suit particular applications. Biomolecules of interest include polysaccharides, such as chondroitin sulfate or chitosan, and gelatins from different sources. After my graduation in Chemistry by the University of Vigo, I worked for the industry in the UK and Spain, developing and applying methods for food analysis and products for the chemical industry. Due to my growing interest in research, I started a PhD in Teagasc (Ireland) studying natural molecules from potatoes with potential health benefits. Shortly after successfully defending my thesis, I returned to Spain and joined the Recycling and Valorisation Group at the Marine Research Institute, where I currently conduct my research.
